Yeah for Wednesday!

Good Day, Ever since I posted the phrase "Good Eye Might" I want to open every email, blog post or text with that. Really I can't help but to smile when I type it.  But on to Wednesday, today was a good start to it and rapidly descended into not so great, but I planned to do What I Ate Wednesday because I always enjoy being able to go back and get ideas from myself and the others on Peas and Crayons Link party. 

My breakfast, Greenberry Shakeology with 1 Cup Strawberries and 1 cup OJ Blended. 
 This is the new Java Blue Lime Twist at Starbucks. This is the Bomb Diggity drink. They have one other flavor and it adds the perfect fresh taste to the morning coffee. I could drink this everyday. 
 My on the Road Snack we were driving all over the desert getting some stray errands done that we had missed on Monday. 
 Lunch was a Pear and Tofu Shiritaki Fettuccine. This is a great meal and super simple to make.
1 Package Tofu Shiritaki Noodles
2Tbs Cream Cheese
2 Tbs Sour cream 
2Tbs Parmesan
It tastes great with veggies as well, but I was so hungry I didn't even think about veggies.
Dinnet BLT on Schar mini baguettes. These little Baguettes were fabulous, since going Gluten Free I haven't had a hoagie sandwich and every once in awhile I will miss them, but not anymore. The Sandwich was quite good and I really wanted to spend an hour eating it so it would never end but alas it was so good I hoovered it. 
If you are Gluten Free I recommend that you try the Schar products, each item I have tried has been a great re-placer for the breads I gave up so long ago. Well I gotta run and maybe give the dogs that walk they have been bugging me about now that it has cooled down.

What I Ate Wednesday

Good Evening! How is everyone doing out there?  I am well, currently learning how to cope with a sprained ankle. At almost 30 I have never had a sprained ankle so this is a brand new experience for me. I right now am sitting with my ankle on an ice pack because after my first day back to work it has been a little sore. After taking 9 Ibuprofen for two days I want to try and reduce this so I am going to work it through it until tonight when I go to bed. But I am not on here to talk about my ankle I have another post in mind for that. I wanted to talk about What I ate, I love to eat! I take joy in food and always try to find something that will delight my taste buds. So on with the Show!  (I am loving the line today, I guess with a sprained ankle I want everything in my life to be a show since my physical activity has been drastically reduced.)

Breakfast!:

Chocolate Covered Strawberry Shakeology
 My Morning cup of coffee! Can't life without that. 
Lunch!:
I don't have a picture of Lunch it was the new enchilada recipe that I created the other day, I will share it on Fabulous Food Friday!
Afternoon Snack!:
Grapefruit and 2 hard boiled eggs.
Dinner!:
And the Staple in my menu's lately. Vegan Pad Thai

This is what I ate today. As I look at this I realize I need to expand my menus because I have been eating the same things over and over again. 
To add what Cotter Crunch adds to her WIAW, What I worked Wednesday (WIWW).  I don't have a specific what I worked, but the video I did was Winsor Pilates the Advanced DVD. So after months of doing Chalean Extreme, Turbo Fire and Hiking, this workout seems like nothing at all. I barely broke a sweat and didn't feel like it had really worked my body the way I like. Now if I am sore in the morning I will be ecstatic. I am looking forward to my ankle being 100% again, I really didn't realize how much I missed being able to jump around and break a good sweat until it was ripped from my grasp.

What I Ate Wednesday and some things I did too.

I am linking up to Peas and Crayons What I ate Wednesday (WIAW), because I thought it would be fun. I haven't posted a day of eating like me in a long while.
 My Morning Coffee, Sadly I can't start my day with out this blessed cup of coffee with Agave and coconut creamer. Infact now I am ready for a decaf cup. 
This is my Shakeology I have been drinking every morning for the last month. This is the Chocolate Covered Strawberry that I am currently obsessed with. If you haven't heard about Shakeology or read about the facts you can click on the link or go here to read more. 
Since I am on Spring Break (Woo Hoo) Grandma and I went to the local farmers market and picked up a few Items that we can't get at the local grocers. One of which is Avocado blossom honey. It is some of the best tasting honey I have had in a long time and it is from a farm 70 miles away so supposedly it will help with allergies (or that is what I heard and haven't looked up yet). Anyways since we were out and about I suggested that we try the new Pho restaurant in La Quinta called Pho Vu.  
I got the Vegetarian Pho with Veggies and Tofu. It was tasty and my belly was happy. I will be going back frequently, I have missed Pho and now I have it back. 
And there ends my exciting foods! I had leftovers for dinner and a rice cake with Peanut butter and Crofters Asian Super Fruit spread. (Yum)

Don't judge me by what I am about to show you, it is taking a lot to share this picture with you. When taking pictures in my home I often try to figure out how to avoid showing anything other than the item I want to share. This is one of the things I am trying to balance in my life so bear with me as I learn how to balance cleanliness and the rest of my life.

Today was not as productive as I wanted it to be but I did build a bookshelf to clean up this mess.
 I really do want to be more organized, but it seems with School and work everything just gets thrown in a pile and then begins to multiply like rabbits. Oh my goodness I can not believe I am posting the mess of a living room. But at least I can take comfort that it now looks like this:
Even though I am sitting right in front of this I could sit here and stare at this picture forever. I like straight lines, bookshelves that are full and no stupid clutter. My soul always sighs in relief.
